Sweet mango Chutney

Ingredients:

Raw Mangoes : 4-5 ( Peel off the mangoes)
Sugar : 7-8 tablespoons
Methi seeds - 1 small teaspoon
Saunf ( Fennel) seeds - 1 small teaspoon
Cumin seeds - 1 small teaspoon
Black mustard seeds - 1/2 small teaspoon
Yellow mustard seeds - 1/2 small teaspoon
Oil - 2-3 tablespoons
Salt to taste ( Salt should be less may be around 2 teaspoon)
Black salt - 2 teaspoon
Amchur powder - 1-2 teaspoon
Cumin powder- 1 tablespoon
Coriander powder - 1 tablespoon
Red chillies powder - 1-2 tablespoon ( depending on how spicy you like)
Turmeric powder - 1 teaspoon

Method:
Put oil in a pan. Add cumin seeds, fennel seeds, methi seeds, mustard seeds till it splutter. Then add mangoes ,mix it well ,cover the pan with lid.Simmer it for 5-10 minutes till the mangoes get softened. Open the lid. Add turmeric powder and salt to taste. Fry it for few minutes, then add sugar and water. Let it boil for around 7-8 minutes. Then add black salt, amchur powder, coriander powder, cumin powder and red chillies powder. Mix it well and leave for boiling for around 5 more minutes or till the chutney gets thicker. Serve it hot or have it as and when required. If refrigerated, it will serve well for 4-5 days. Just try it out. It tastes amazing.
